baked courgette fries

You might remember that last year, I blogged about our New Year's Eve Eve - just a quiet celebration with us alone at home, something that we wanted to continue doing every year as the actual NYE is usually spent with other people. 

This past NYE was hosted by us, so we didn't feel much like cooking too much or making a mess, but we did still want to have some nice food and wine to carry on the tradition (not that having nice food and wine isn't a fairly regular occurrence anyway...). And we also knew that there was a big feast to come the next day, so we wanted to keep it quite light.

The big and surprisingly delicious cheat of the meal were the prepared mussels from M&S, which you just need to heat up on the hob - these are really quite handy for a lazy dinner. To accompany them, although regular fries would have been great (when are they not?), I decided to try my hand at a slightly healthier alternative - baked courgette fries.

The recipe is at the end of the post, although you can hardly call it a recipe - it's so easy your pet could make them. I just improvised having looked at a few recipes online, and they came out great which was a success! E enjoyed them too which is a good stamp of approval to have.

It was a lovely evening of chatting about the year past and our plans for 2015, and it forced E to take a break from food prepping for the next day which was the most important thing!

Courgette Fries

2-3 courgettes, sliced into "fries"
1/3 cup dried breadcrumbs
1/3 cup ground almonds
1/3 cup parmesan
dried herbs of choice
2 eggs
salt and pepper

To make:
1) Preheat oven to 200 degrees celsius.
2) Mix the dry ingredients together in a bowl with a pinch of salt, and whisk the eggs in another bowl.
3) Dip the courgette pieces in the eggs, then cover with crumb mixture.
4) Spread courgette pieces a single layer on a baking tray, and bake for about 30 minutes, flipping halfway through.
5) To make them extra crispy, place under the grill for a couple of minutes - keep an eye on them!
6) Enjoy with extra sea salt and pepper, or dip in mayo, hummus, taramasalata.. the list goes on,
